Why Syrup Matters

Sugar changes texture, softens alcohol, carries spice, and integrates bitters and citrus. Simple syrup, rich syrup, demerara syrup, honey syrup, maple syrup, and spiced syrups each bring a different weight.

Core Syrups

Simple syrup sweetens without much flavor. Rich syrup gives a silkier texture. Demerara syrup adds darker sugar notes that echo caramel, molasses, and oak. Honey syrup brings floral depth. Maple is powerful and should be used carefully.

Storage

Fresh syrups belong in the refrigerator in small labeled batches. If a syrup smells fermented, cloudy, or off, discard it.
